Review: First off they are on the corner of 10th and oak, you can park in the parking garage right above it which makes it fairly convenient. The first thing that hit me when I came in is the wonderful smell, and then I noticed how exceptionally clean the bakery is. I tried a sample piece and it had the perfect crumb with the right density which for those who eat gluten-free you know that's a real struggle. USUALLY with gluten free if it's not as dry as the Sahara desert, It's denser than a lead packed wet sock. That's NOT the case here at all. I tried to show some restraint, but I pretty much failed lol I walked away with four rolls, a olive boule, and a loaf of the regular bread. Price points are really good for fresh made gluten-free bread floating around $14 for a large loaf. I immediately knew what I wanted to make. Does it taste gluten free? This is something I struggled with originally. All of the best textured GF items had an earthy flavor caused by things like millet, sorghum, and amaranth flours. For someone who grew up on white bread... It was a struggle. I learned eventually how to compliment these earthy flavors and balance them out so they weren't as aggressive but Y'all let me tell you. fig & bean goes A LONG WAY to make that easy. Yes, you can taste some earthy flavors but *almost* in a sourdough tangy way. Do not sleep on this place. Go down, talk to their baker and try a sample. These places survive if we support them.
