Review: One of my favorite places in Havana, and arguably one of the most important as well. The menu has a focus on indigenous, precolonial cuisine, which is sadly underrepresented here. Not only is the food culturally significant, it's also delicious! The name is a reference to casabe, a flatbread made with yucca (aka cassava). It's a traditional Taino dish that's similar to masa, but lighter, and with a chewier texture and mouth feel that's remarkably gluten like. They use that pallete to showcase an array of meats and vegetables, all cooked to perfection. Everything I've had has been absolutely incredible. I plan on being a regular visitor every time I make it back to Cuba!
