Introducing Sushi Korin
– A Message to the Celiac Community
So many people come to Japan with one dream: to taste real sushi.
In Tokyo, authentic sushi is everywhere.
But for those living with celiac disease, that dream often ends in quiet disappointmentor even fear.
Because truly safe sushi? It’s still almost impossible to find.
I didn’t always know this.
The first time I tasted gluten-free soy sauce, I was shaken.
It wasn’t soy sauce, it was a hollow imitation that betrayed the heart of what sushi should be.
In that moment, I felt, perhaps for the first time the quiet, daily burden carried by those with celiac disease.
As a sushi chef, I knew I could no longer look away. So I began again.
Not by changing a sauce, but by rethinking every element of our craft from tare to miso to dashi.
With care. With precision. And with respect.
At Sushi Korin, our omakase is fully gluten-free upon request.
Not as a compromise, but as a commitment.
Every dish is prepared separately, every ingredient carefully selected, and our signature gluten-free soy sauce was developed in-house after tasting and rejecting over 20 commercial options.
We are a small, traditional sushi restaurant in Tokyo.
Reservations are essential, so we can prepare for you with the utmost attention and care.
